Pie Crust:
2 cups unbleached flour
1/2 cup butter, room temperature
1 cup sugar
2 eggs
pinch of salt
1/2 teaspoon grated lemon rind

Sift flour, sugar, and salt. Make a well of dry ingredients on pastry board. Place butter, eggs, and lemon rind in well and work dough with hands quickly. Do not add water. When smooth shape into a ball and chill 30 minutes. Dough is then ready

-This is a recipe that is 30 years old, you can now buy pie crust, Pillsbury roll out is pretty good - Grandma

Filling:

1 pound ricotta
slightly less than 1 cup sugar
5 egg yolks
1/2 glass milk or half & half
1 teaspoon vanilla
dash of cinnamon (optional)
1/2 pound cooked wheat (Grandma uses a brand called Asti cooked wheat, any will work just look at Italian bakery or store for cooked wheat)
1 grated orange peel
1/2 grated lemon peel

Beat Ricotta and sugar together, add egg yolks, vanilla, cinnamon, lemon and orange peel. Add wheat and blend

Pour mixture into pie shell then arrange strips of crust in a criss-cross pattern over the wheat and turn into your pie shell to seal together.

Bake at 350 degrees about an hour or until center is firm and crust is nicely browned. Allow to cool in the over.

To make wheat if not purchased pre-cooked:
Cover with cold water and bring to a boil. Drain then soak wheat for 2 days changing water daily. Cook an hour prior to using and add a pinch of salt to boiling pot. Drain, add 1/2 cup scalded milk and 1 teaspoon sugar, cook 5 minutes. Allow to cool before adding to mixture.
