Steam Rice:
2 cups long grain rice (or Calrose rice)
2 1/4 cup chicken broth

Pork Fried Rice:
6 medium eggs
6 Tablespoons vegetable oil
4 garlic cloves, finely chopped
4 shallots, ends trimmed, thinly sliced, or 1 medium chopped onion
1/2 pound of mixed vegetables (carrots and peas only) thawed
1 cup sliced mushrooms
1 teaspoon black pepper
1 1/2 Tablespoon sugar
3 teaspoon fish sauce or 3 teaspoon oyster sauce
1/2 cup soy sauce
1 1/2 teaspoon sesame oil
1/4 cup water, extra
1/4 cup chopped cilantro
2 cups of cooked chicken, cooked (deveined) shrimp, or cooked chopped ham

Steam Rice:
1. Place rice in fine mesh strainer and rinse under cold water until the water runs clear.
2. Place rice and measured chicken broth in medium saucepan.
3. First cook rice at high heat without lid until it boils. Stir and reduce heat to low. Then cook covered for 15 minutes.
4. Let it stand for 10 minutes.
5. Use a fork to separate the grains. Spread the rice over a baking tray and set aside to cool completely.

Fried Rice:
1. Combine the soy sauce, sugar, fish sauce, black pepper and sesame oil in a bowl. Stir until the sugar dissolves. Set aside until required.
2. In a large bowl, beat eggs well.
3. In a large skillet or non stick wok, heat 4 Tablespoons over medium heat for 1 minute. Add beaten eggs and and cook quickly, scrambling them with a spoon. Place eggs on a plate and set aside.
4. In a clean skillet or non stick wok, heat 4 Tablespoons of oil over medium heat 1 minute. Add garlic, shallot or onions and cook uncovered for 2 minutes or until aromatic, stirring occasionally.
5. Add mushrooms, stir fry about 2 minutes until it is soft.
6. Add mix vegetables (peas and carrots) and toss to combine. Add the extra water. Cook, stirring occasionally, for 3 minutes or until the vegetables are tender crisp and the liquid has evaporated.
7. Add cooked chicken, shrimp, or ham and cook 1 or 2 minutes.
8. Turn heat to low.
9. Add rice, eggs, and mixed soy sauce and stir well using a wooden spoon to break up any lumps of rice.
10. Add cilantro, stir well again and turn off heat in 5 minutes.

*Please cook rice 5 or 6 hours early for it to completely cool off, for the mix soy sauce ingredient may increase or decrease depending on your taste.
