1 8-oz can almond paste
1 1/2 cups butter, softened
1 cup sugar
4 eggs separate
1 teaspoon almond extract
2 cups sifted flour
1/2 teaspoon salt
10 drops green food coloring
8 drops red food coloring
1 jar apricot preserves
3 squares semi-sweet chocolate

Directions:

preheat oven to 350 degrees, grease 3 13x9 pans, line with wax paper then grease paper as well.

Break almond paste into pieces then add butter, sugar, egg yolks, and almond extract - beat until smooth. Beat in flour and salt

In separate bowl beat egg whites until stiff peaks form, then fold with a wooden spoon into batter - divide batter into 3 parts (1 1/2 cups each) Add green coloring to one and red coloring to another. Spread batter onto three prepared trays and bake for 15 minutes

Remove to wire rack - heat apricot preserves - layer green cookie, jelly, yellow cookie, jelly, red cookie - cover with plastic wrap and refrigerate overnight with something heavy on top of cookie

Heat chocolate - spread on top and let cool - then flip and do the same thing to the other side. Once chocolate sets cut into squares
