Ingredients:
Ingredients:
3-4 lbs. pork tenderloin-I buy the logs at Costco that come with two in a pack
2 cloves garlic, minced
1 Tbs. chili powder

Sauce:
1/2 cup crab apple jelly or we like plum jelly
1/2 cup ketchup
1 Tbs. vinegar
1/2 tsp. chili powder

Directions:
Directions:
Heat oven to 325º. Place pork logs in roasting pan. Rub with minced garlic and chili powder. Cook for 1 to 1 1/2 hours. The first hour uncovered and the remaining time covered. Baste with sauce occasionally.

Sauce: combine ingredients and bring to a boil. Simmer for 2 minutes. I like to double the recipe for leftovers.

Serve with sticky white rice and pour sauce over both.
