1 qt. milk
vanilla bean
1 c. sugar
6 egg yolks

Preheat oven to 325º.

Scrape vanilla bean and set aside seeds. Add the cream and vanilla bean shell into a pan over medium heat until a light boil. Cover and let sit for 15 minutes. Strain into a fine mesh sieve to remove vanilla bean bits. Meanwhile, whisk sugar and egg yolks until blended and yellow in color. Slowly add cream and vanilla bean seeds to egg yolk mixture and poor into ramekins in a baking dish. Fill baking dish with hot water until water is half way up the ramekins. Bake until mixture is set. Let cool.

Add 1 tsp. fine sugar over top and crisp with a torch.
