3/4 c. apple juice
2 pkgs. powdered fruit pectin (1 3/4 oz. each)
1/2 tsp. orange extract
1 c. sugar - plus sugar to roll candy in
1/2 tsp. baking soda
1 c. light corn syrup
orange paste food coloring

Directions:
Line an 8" square baking pan with aluminum foil, extending foil over 2 sides of pan. Grease foil. In a small saucepan, combine apple juice and fruit pectin. Stir in baking soda (mixture will foam). In a heavy medium saucepan, combine 1 cup sugar and corn syrup. Whisking pectin mixture constantly and stirring sugar mixture constantly, cook both mixtures at the same time over medium-high heat about 5 minutes or until pectin mixture dissolves and sugar mixture comes to a rolling boil. Continuing to stir, slowly pour pectin mixture into sugar mixture. Stirring constantly, continue to boil 4 minutes. Remove from heat and stir in orange extract, tint orange. Pour into prepared pan. Chill about 30 minutes or until firm enough to cut. Use ends of foil to lift candy from pan. Use a wet 1 inch aspic cutter to cut candy into desired shapes. Roll candies in sugar. Store in a single layer in an airtight container in refrigerator. Yields: about 5 dozen candies.
