1 ear of corn
1/4 cup olive oil, divided
1/3 cup diced red onion
1/2 cup diced pepper
1/3 cup chopped cilantro
1/3 cup diced tomato
6 tbsp. fresh lime juice
1 can black beans
salt/pepper to taste

Directions:
Directions:
Preheat broiler. Cut corn from cob and toss in 2 tbsp. olive oil. Place on an aluminum foil lined baking sheet and broil 5 minutes or until golden brown and tender. Set aside.
Toss together onion, pepper, cilantro, line juice, beans, corn and remaining olive oil in a bowl.
Season to taste
