2 TABLESPOONS BUTTER
1 TABLESPOON OIL
1 DICED ONION
2 LARGE STALKS DICED CELERY
6 MEDIUM POTATOES PARED AND DICED
3 TABLESPOONS FLOUR
1 1/2 CUPS DICED HAM
1 TEASPOON SALT
3 1/2 CUPS MILK

Directions:
SAUTE ONION IN BUTTER AND OIL UNTIL TRANSLUCENT. ADD POTATOES AND STIR TO COAT. COOK SLOWLY FOR A FEW MOMENTS. STIRRING TO PREVENT STICKING AND BROWNING. ADD DICED CELERY. COVER AND COOK ABOUT 10 MINUTES DO NOT LET BROWN. ADD HAM AND COOK ANOTHER 10 MINUTES. VEGETABLES SHOULD BE DONE. REMOVE FROM HEAT AND STIR IN FLOUR AND SALT. MIX WELL THEN ADD MILK 1 CUP AT A TIME STIRRING CONSTANTLY. BRING TO A SIMMER STIRRING TO MAKE SURE NOTHING STICKS ON BOTTOM. SIMMER FOR 20 MINUTES.
