2 c. flour
1 c. brown sugar
1-1/4 c. white sugar
3/4 c. cocoa
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon

4 eggs, lightly beaten
3/4 c. vegetable oil
3/4 c. apple juice
3 c. grated zucchini

Directions:
Directions:
Sift the first 8 ingredients (dry ingredients) into a large bowl. Add eggs, oil & apple juice to dry ingredients. Mix well. Stir in zucchini. Pour into greased 9x13 pan (or 2 - 9" round pans with parchment paper lining). Bake at 340F (170 C) for 45-50 minutes. (Bake only 40 minutes for round cakes.) Remove from round pans & cool completely.

Frost with ganache icing as follows:
Bring 200 gram heavy cream to a boil. Remove from heat. Add 200 gram good dark chocolate. Stir until smooth. Cool in fridge. Whip with beater, adding enough icing sugar until reaching desired consistency.
