5 cups high quality chicken or veg broth
2T olive oil
1T butter
2 sliced scallions
3/4 cup uncooked Arborio rice
salt
2 c fresh or frozen peas (I use the tiny ones)
1/3 cup fresh grated Parmesan cheese
1T chopped parsley

Directions:
Directions:
Heat broth to simmer in sauce pan
In large sauce pan, heat olive oil and butter
Add scallions for 2 min
Add hot broth and rice, stir well
Cover, reduce heat and simmer around 15 min
Add salt if needed
Stir in peas and cook gently 2-5 min
Stir in Parm and parsley
Add more broth if too thick
Serve at once

I love this soup and it is so easy to make. Good for a simple dinner or lunch. Leftovers are good also as the rice swells and it makes for more of a stew like consistency.
