3 eggs, beaten;
8 oz. farmer or goat cheese;
4 oz. Locatelli cheese or Parmesan cheese;
3/4 lb. cottage cheese; and
2 packages frozen spinach, thawed and drained.

Directions:
Directions:
Preheat oven to 400 degrees. Grease 9" x 13" glass baking dish. Mix the eggs, cheeses and salt together. Add spinach and mix thoroughly. Pour into baking dish and bake for approximately 1 hour or until top is slightly browned.

This recipe was handed down to me by my mother-in-law, Esther Koplitz. Our children love it and she would be happy to know that they make it themselves and still enjoy it.
