Sauce:

1 tbsp. olive oil
1 medium onion
4 cloves garlic,minced
3 tbsp. tomato paste
1 (28 oz) can crushed fire roasted tomatoes
1 minced chipotle in adobe sauce, or more to taste
2 tsp. chopped oregano
1 sprig fresh rosemary
salt
1/4 cup torn fresh basil leaves

Meatballs:

Cooking spray
1 pound ground turkey
1/3 cup whole wheat bread crumbs
1/4 grated Parmesan
1/2 cup finely grated carrot
1/2 cup chopped onion
2 cloves garlic, minced
2 tbsp. minced fresh parley leaves
2 tsp. minced fresh thyme leaves
1 egg, lightly beaten
1/2 tsp. salt
ground black pepper

1 16oz. box whole wheat pasta

Directions:
Heat oil over medium heat. Saute onions about 3 minutes, add garlic cook for 1 minute. Add tomato paste, tomatoes, chipotles, oregano, rosemary, and salt. Bring to low boil, reduce heat heat and cook for about 15 minutes. Season with salt and pepper to taste. While Sauce is cooking make the meatballs

Preheat broiler. Spray baking sheet with cooking spray. Combine the turkey with all ingredients in large bowl. Form into 2 1/2 inch ball and place on baking sheet. Broil for 10 minutes or until completely cooked through.

Remove rosemary sprig from sauce and add the meatballs to the sauce, cover and cook for 10 minutes.

While meatballs are cooking, prepare spaghetti according to package direction.

Serve meatballs and sauce over pasta, garnish with parsley and sprinkle of Parmesan cheese.

This is one of the first recipes I made when we first started our "clean eating" diet. The meatballs and sauce are delicious, and are also good in a whole wheat pita. Even the kids love this one!!
