3 eggs, room temperature
1 c. sugar
2/3 c. pumpkin
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. ginger

Filling:
8 ox. cream cheese, softened
4 tbsp. butter, softened
1/2 tsp. vanilla
1 c. powdered sugar

Preheat oven to 375º.

Cake:
Beat eggs and sugar until creamy, add eggs. Mix dry ingredients and add to wet and combine until mixed.

Filling:
Beat cream cheese and butter until smooth. Add vanilla and beat in powdered sugar until smooth.

Line baking sheet with parchment paper and spread cake mixture evenly into the pan. Bake for 12-13 minutes and turn out on a towel dusted with powdered sugar. Roll slowly without cracking cake and let cool completely. Unroll and spread cream cheese mixture and re-roll.
