3 CUPS GREEK YOGURT
3 TABLESPOONS LEMON
1 GARLIC GLOVE CHOPPED
2 MEDIUM CUCUMBERS, SEEDED AND DICED
1 TABLESPOON KOSHER SALT FOR SALTING CUKES
1 TABLESPOON CHOPPED DILL
SALT AND PEPPER TO TASTE

PEEL CUCUMBER THEN CUT IN HALF LENGTHWISE AND TAKE A SMALL SPOON AND SCRAPE OUT SEEDS. SLICE CUCUMBERS AND PUT INTO COLANDER, SPRINKLE WITH 1 TABLESPOON SALT. AND LET STAND FOR 1 HOUR TO DRAW OUT WATER. DRAIN WELL AND WIPE DRY WITH PAPER TOWEL. IN FOOD PROCESSOR WITH STEEL BLADE ADD CUCUMBER, GARLIC, LEMON JUICE, DILL AND TOUCH OF PEPPER. PROCESS UNTIL WILL BLENDED, THEN STIR THIS MIXTURE INTO YOGURT. TASTE BEFORE ADDING SALT. PLACE IN REFRIGERATE FOR 2 HOURS BEFORE SERVING.
