3 c flour
1 tsp salt
1 tsp baking soda
2 tsp cinnamon
2 c sugar
2 eggs
1 c vegetable oil
2 c carrots (grated)
1 tsp vanilla
1 can (8 oz) crushed pineapple
1 c nuts

Frosting:
1 pkg (8 oz) cream cheese, softened
4 T softened margarine
1 pkg (16 oz) powdered sugar
1 tsp vanilla
1 tsp grated orange peel

Directions:
Directions:
Sift flour, measure and resift with salt, soda and cinnamon. Set aside. In large mixing bowl, combine sugar, eggs and oil, beating until smooth. Add flour mixture and then carrots and pineapple, blending after each addition. Add nuts and vanilla. Blend thoroughly. Put in 9 x 13 pan. Bake at 325º for 60 minutes.
