2 pounds boneless pork shoulder
8 cups water
1 tsp sage
1/2 tsp each S & P
1/4 tsp thyme
1/8 tsp nutmeg
1.5 cups yellow cornmeal
flour
butter
maple syrup

Directions:
Directions:
Trim pork and put in a deep pot and add 6 cups water, sage, salt pepper, thyme, and nutmeg. Boil 2 hours, should be tender. Lift meat from broth and reserve broth. Chop pork finely and return to broth.

Place cornmeal in large bowl, Use a whisk and gradually stir remaining 2 cups water into cornmeal. Stir cornmeal mixture into pork and broth. Return to med heat and cook, stirring often with long spoon, until very thick - 30 minutes.. Pour into 2 greased loaf pans. Cover and refrigerate til firm. overnight.

Cut scrapple into 1/2 inch slices, dust lightly with flour on both sides. Butter frying pan and fry slices in one layer til brown, then flip. Serve hot with sauteed apples or maple syrup.
