2 tsp. olive oil
1 onion finely chopped
2 stalks celery - finely chopped
3 c. chicken broth
1 c. pearl barley
1/2 c. shredded cheese (Kraft 4 cheese pre-shredded, or shredded Asiago)
1/4 c. fresh basil (you can used 1.5 tsp. dried but fresh is best!)

Directions:
Directions:
In a large sauce pan heat oil and cook celery and onion for 5-7 mins or until tender.
Add broth and barley and cook on medium heat for 30-40 minutes. You may add additional water as needed to suite your preference for tenderness.
Remove from heat. Add cheese and basil and mix well!
Enjoy!
