Ingredients:  
Fresh chicken ( I use the neck, back, breast bone, and any other bones from wings, etc. )
Water to fill large pot about 3/4 ( 10-15 cups, depending on pot size )
2 TBSP. vinegar
1 large onion, cut in quarters
2 med. carrots, cut in fair size pieces
1-2 stalks of celery ( use the leaves too)
Fresh parsley
Sea salt
Black ground pepper
Thyme
1-2 Bay leaves

Directions:
Directions:
Put chicken bones, cold water, and vinegar in a large cooking pot. Soak the bones in this water for 1 hour before you apply any heat. Soaking the bones in the vinegar water pulls the rich minerals out of the bones making your broth mineral rich!

Turn on the heat and cook for 1 hour. Then add the onions, carrots, celery and bay leaves, parsley, and thyme. Cook until the meat falls off the bones. Remove from heat. Strain the broth. You can use the meat from the bones to add to your soup.

Add salt and pepper.

This broth freezes well and can be used as the base for all types of soups.

It took me a while to learn how to make a really tasty broth. You just have to experiment with the spices and add them near the end of the cooking time.
