8 cups water
1 3/4 T kosher salt - divided
2 10 oz bags pearl onions
2 T uns butter
2 T flour
2 cups whole milk
1/4 tsp nutmeg
4 sprigs fresh sage

Directions:
Directions:
Boil water and add salt. Add onion, cook til tender about 12 minutes. Drain. Wen cool enough to handle, trim root ends with a paring knife and pop out of their skins. Let dry on a towel.

Melt butter in small saucepan med heat, add flour, whisk smooth, until mixture bubbles, slightly but has not started to brown, about 1.5 minutes. Slowly whisk in milk. Raise heat to med-hi, and bring to a boil, whisking frequently. Stir in remaining 3/4 T salt, nutmeg and sage. reduce heat to low and continue cooking 12 to 15 minutes. Stir in onions and heat thru 5 - 10 minutes. Discard sage.
