Bacon & Potato Chowder Recipe

6 strips of bacon
1 medium onion, chopped
3 medium potatoes, diced
4 cups of chicken broth OR
4 cups of water ( with 2-3 TBSP chicken soup base )
1/2 tsp. sea salt
dash of black ground pepper
1 bay leaf
3 TBSP. flour
1 cup whole milk ( or 2 % )

Directions:

1.) Fry bacon until crisp. Drain well and set aside.
2.) Saute onion in bacon drippings, olive oil or coconut oil.
3.) Put potatoes, broth, onions and bay leaf in a large cooking pot. Bring to a boil, reduce heat and slowly cook until potatoes are tender.
4.) Add milk. Bring back to a light boil.
5.) Mix flour with 1 TBSP. of olive oil to make a paste. Gradually add to soup to desired thickness.
6.) For a creamy soup put half or all of the mixture in a blender and blend well.
6.) Add salt & pepper.
7.) Garnish with fresh parsley and crushed bacon.
