Salmon Poached in Chardonnay Recipe

6 salmon filets
8 TBSP butter
1 tsp salt
2 shallots, finely chopped
1 TBSP lemon juice
1/2 c chardonnay (or more!)
1 1/2 TBSP flour
2 TBSP heavy cream
6 sprigs dill

Directions:
Directions:
1) Preheat oven to 400. Wash salmon and dry on paper towel.
2) Put 1 TBSP butter under each salmon filet in medium baking dish. Place a sprig of dill on top of each filet. Sprinkle with salt, shallots and lemon juice. Add enough chardonnay to cover the bottom of the dish, about 1/4".
3) Bake 25 minutes or until salmon flakes easily with a fork.
4) Carefully remove fish, arrange on heatproof platter and keep warm. Pour remaining liquid through a strainer, reserving 1 cup.
5) Melt 2 TBSP butter in small saucepan, remove from heat and stir in flour until smooth. Gradually stir in reserved fish liquid, continue stirring until thickened. Stir in cream.
6) Pour sauce over salmon, put under broiler for 3-5 minutes until golden brown.

Most of the time, I just skip the cream sauce, and pour a little of the liquid over the salmon before serving. which makes this super easy. The chardonnay flavors the fish beautifully!
