1 c whole wheat or all-purpose flour
1 tsp. pumpkin pie spice
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1 c light brown sugar packed
1/4 c vegetable oil
1 can (15 oz.) Libby's Pure Pumpkin
2 large eggs slightly beaten
1 c low fat granola cereal, crumbled

Preheat oven to 350º.
Paper- line or grease mini muffin pans.
Combine flour and spices in small bowl.
Beat sugar and oil in medium bowl till well mixed.
Add pumpkin and eggs; Beat well.
Gradually stir in flour mixture.
Spoon batter into muffin cups, filling them 2/3 full.
Sprinkle each muffin cup with 1/2 tsp. crumbled granola. Press it slightly into batter.
Bake 15 -20 minutes. Cool in pan 10 minutes. Remove to wire racks to cool completely. Store in covers containers or resealable plastic bags.
