48 oz. Apricots
15 pounds apples (cooking apples - gala or fuji)
1 cup of sugar (but start with ¾ cup and add to 1 cup, if necessary)
10 cups Water

Directions:
Directions:
Peel and core apples. Cut apples in small slices. Fill pot with apples. Then add water about 3/4 of the way up the pot. There should be less water than apples. Cut up apricots add to pot. Add sugar. Keep on medium flame for about 1 hour to 1 ½ hours - possibly more, if needed.

Stir and mash if necessary - use a hand blender if you have one.

My mother-in-law, Esther Koplitz made this every Passover, and the family loved it. Her two granddaughters, Lisa and Clara Koplitz really perfected the recipe after their grandmother's passing. They continue a wonderful legacy by making this wonderful treat for the family every year.

We have moved this tradition from NY to FL to AZ and it is still a family favorite. This recipe is huge. (see photo attached to this recipe for the volume this recipe makes) There is enough to have at your table and to share with neighbors and friends. Traditions should be shared - so enjoy!

We enjoy is at breakfast with egg matzo and cream cheese. It can be frozen also for future use.
