2 eggs
a half finely-chopped onion
and a pinch of salt

Wash the petals, and cook them in boiling water with a dash of salt, and strain the petals. Add a string of oil in a frying pan, add the chopped onion, the flowers, then crack two eggs in the pan and a dash of salt, It is ready when the egg is cooked. It is usually accompanied with tortillas or rice..

This edible flower comes from the Itabo tree (Yucca elephantipes), The tree is usually located in rural regions of Costa Rica and was used to surround houses as a barrier of sorts, for privacy as well as for decoration, due to its strong roots which maintain a good hold on sloping terrains or surfaces. The Itabo the Flower is rich in vitamin C, iron, phosphorus, niacin as well as fiber and has a characteristic bitter flavor, to decrease the bitter flavor is recommendable to use only the petals.
