1 package of dry yeast
¾ cup of warm water
2 eggs
2 tablespoons of granulated sugar
2 ½ cups all purpose flour
½ teaspoon salt
Vegetable oil for frying
Confectionary sugar for sprinkling on top of cooked Zeppole

Directions:
Directions:
Sprinkle yeast into warm water and stir to dissolve. Let stand 5 minutes. Stir in eggs and sugar. Add flour and salt and stir until mixed in smoothly. Place in a greased bowl and cover. Allow to rise until doubled in bulk (about one hour). Punch down and knead for a minute. Allow to rise again until double in bulk (about thirty to forty-five minute). Pour oil to the depth of 2 inches in a skillet or use a deep fryer. Heat the oil to 400 degrees. Drop by teaspoonfuls into hot oil. They will form their own shapes. Remove from oil and drain completely on paper towel. Sprinkle with confectionary sugar and serve. Goes well with after dinner drinks and/or coffee or tea.

This is a favorite Italian dessert. They are easy to make and very light and must be served hot. Make the dough in advance of your meal and fry them after your meal for a wonderful fast dessert.
