Must have a roasting pan with a cover to do this recipe.

1/2 stick salted butter
12# Turkey ( NO LARGER )
2 tsp. salt
2 tsp. pepper
2 stalks celery
1 medium onion
1 large carrot
2 cups boiling water

Directions:
Directions:
Preheat oven to 500 degrees

Rub butter on outside of turkey. Sprinkle with salt and pepper. Roughly cut celery, onion and carrots and place in cavity of turkey. Place turkey, breast side up on rack in roasting pan. Boil 2 cups of water and place into bottom of pan. Cover pan with lid.

Bake 1 hour ONLY. Shut oven off after 1 hour and DO NOT OPEN OVEN DOOR UNTIL 4-6 HOURS LATER.

This really works. Turkey comes out very moist.

This is a good method to do the night before Thanksgiving so as not to tie up your oven all day. I have made it many times on a Saturday night. I put it in at about 11:00 and shut off the oven at midnight and go to bed. It is perfectly cooked in the morning and I just reheat it for dinner later on Sunday.
