Cream 1/4 pound butter and 1 cup sugar. Add two eggs beat well. Add coconut (approximately 1.5-2 cups) to get a thick consistency

Purchase Pillsbury roll out pie dough - cut dough into circles large enough to place in the bottom of a cupcake tine.
Directions:

Add a dab of jelly to each then cover with 1 spoon of dough

Bake at 400 degrees until brown (about 10 minutes)
