1½ pounds lean ground beef
1 can Old El Paso refried beans
1 can tomato sauce
1 package Old El Paso taco seasoning
shredded cheese
1 package corn tortillas (thinner the better)

Directions:
Directions:
Brown ground beef and season with ½ to ¾ package of taco seasoning. Drain. Add about ¼ to ½ can of refried beans. (You just want enough beans to make ground beef hold together.) In a saucepan, warm the tomato sauce. Dip tortillas in warm tomato sauce and place in 9x13 pan. Add a couple spoonfuls of meat mixture and roll up tortilla. Repeat until meat mixture is gone. (I typically get about 24 rolled tortillas in a 9x13 pan.) If there is tomato sauce left, spoon over the top of the rolled tortillas. Spread shredded cheese over enchiladas and bake uncovered at 350 degrees until cheese is melted.

If you have left over roast beef, potatoes and carrots, they are really good to chop up and add to meat mixture. I have also used sliced ripe black olives on top.
