1½ - 2 pounds chicken tenders (breast strips)
1 cup orange juice
2 to 3 tsp light (reduced sodium) soy sauce
1 can (11 oz) mandarin oranges, drained

Directions:
Directions:
Pre-heat a sprayed skillet over medium heat. Season the chicken tenders to taste with salt or salt substitute and freshly ground black pepper.

Add orange juice and soy sauce to skillet; cover and simmer for about 10 minutes. Add mandarin orange sections and simmer an additional 5 minutes.

Note: For increased flavor, add 2 Tbsp honey and ½ tsp ground ginger to soy sauce mixture. Makes 4 servings (1 cup each).
