1 cup rice
2 T butter
1 can chicken broth (10-1/2 oz)
3/4 cup water
salt and pepper to taste

Combine all the ingredients in a saucepan and simmer until liquid is absorbed, about 25 min. When rice is cooked toss with.....

1/4 c parmesan cheese
1/4 c chopped parsley

Serve at once. Or place in a lovely porcelain casserole, cover with foil and reheat in a 350º oven
