2 large yellow onions, chopped
1 tsp peppercorns
1 tsp tarragon leaves
2 bay leaves
2 lbs fish filets
½ tsp poultry seasoning
few drops of Tabasco sauce
2 Tbsp diced pimento
1 can of Campbell's cream of chicken soup
1 Tbsp butter or oleo
2 tsp dry mustard
1 tsp salt
1/8 tsp white pepper
½ soup can of milk
1 tsp Worcestershire sauce
¼ cup chopped parsley
3 cups prepared mashed potatoes

Directions:
Tie peppercorns, tarragon and bay leaves in cheese cloth. Place in a large pot with filets and onions. Sprinkle poultry seasoning over top and cover with water. Add Tabasco sauce and bring to a boil. Reduce heat and simmer until onions are tender. Drain and discard seasonings. Butter a large oblong Pyrex dish and arrange fish and onions, then top with diced pimentos. Melt butter and add to soup. Gradually thin with milk and cook over low heat until smooth. Sauce should be like thick gravy. You don’t want it too thin. Remove from heat and add dry mustard, salt, pepper, Worcestershire and parsley. Spoon sauce over fish. Top with fluffy mashed potatoes and sprinkle with paprika. Bake at 375 degrees until bubbly.

Dish can be made ahead: Cover with foil and refrigerate. You can also add shrimp and crab meat to this dish.
