4 c heavy cream
3-4 ounces firm Gorgonzola cheese
3 T freshly grated Parmesan cheese
1/4 t kosher salt
1/4 t freshly ground pepper
3 T minced fresh parsley

Directions:
Directions:
Pour the cream in medium sauce pan. Bring to a boil over medium-high heat. Boil until the cream is as thick as a white sauce, stirring occasionally. Remove from the heat. Whisk in the Gorgonzola cheese, Parmesan cheese, kosher salt, pepper and parsley. Whisk rapidly until cheeses melt. Serve the Gorgonzola Sauce warm over steak or roast beef.
Note: If you must reheat the sauce place the saucepan over low heat until the cheese melts. Then whisk vigorously until the sauce comes together.
