1 c applesauce unsweetened
1 c plus 1 Tbsp. brown sugar
2 eggs
4 Tbsp. melted butter
1 tsp. vanilla
1 cu flour
1 tsp. baking soda
1/2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 peeled,chopped apple
1/2 cu raisins (optional)

Directions:

Preheat oven to 350º. Prepare loaf pan (8 1/2 x 5) by spraying with cooking oil and dust with flour. Sprinkle bottom with 1 Tbsp. brown sugar.
Whisk in a large bowl: applesauce , brown sugar and melted butter and eggs and vanilla.
In another medium bowl mix the flour, salt, baking soda and baking powder and spices.
Stir dry ingredients into the wet. Fold in chopped apples and raisins
Pour into greased, floured loaf pan.
Bake 1 hour and 15 minutes until inserted toothpick comes out clean. Cool 30 minutes on wire rack then remove from pan.
