4 large peeled potatoes
1 large onion
2 eggs
1/2 cup flour
Canola oil enough to thickly coat bottom of pan.

Grate potatoes on large grating side into a very large bowl with cold water and ice.

In a separate bowl beat 2 eggs and flour until it looks like pancake batter. Grate onion on small side of grater and add to the batter mix.

Drain the potatoes of all water an ice then add batter mixture and combine thoroughly.

In frying pans add oil and heat. Scoop a heaping tbsp of mixture, add to the hot oil and flatten slightly. Brown on both sides, drain pancakes on paper towels, salt them and serve immediately.
