1 chopped onion
˝ cup parsley cut
1 lb. ground beef
Salt and pepper to taste
2 cups mashed potatoes
4 matzos soaked and drained

Directions:
Directions:
Take the meat, salt, pepper, onion and parsley and brown in a little oil. Make mashed potatoes the way you normally do (I use butter and milk with my potatoes). Dip the matzo in water but don’t make them too soggy. Line the bottom and sides of a pan that you have either oiled or sprayed with Pam. If you need to use more than 4 matzo, you have my blessings and Grandma’s.

After the matzo is in place, put the chopped meat mixture on top of the matzo. Then, scoop the potatoes on top of that. Be creative and make it pretty – swirl it around! Cook in an oven about 400 degrees until the top is golden brown – about 35 to 40 minutes, depending upon your oven.

This was one of the staples at our Passover Table. My mother-in-law, Esther was a great cook and more importantly, a great role model. She made every holiday meal an event with her love of family and laughter.
