Ingredients:  
Two cups of fresh pumpkin
Three eggs slightly beaten
One cup half and half
One cup sugar
One tablespoon of pumpkin pie spice or more to taste
One tsp vanilla
1/2 tsp salt
Added cinnamon if you want

Directions:
Directions:
Take one medium sugar pie pumpkin
Cut in half
Face down on baking dish or cookie sheet
I add a little olive oil over it
Then cover with aluminum foil
Put in 400 degree oven
Bake one hour
Then cool
Scoop out seeds and discard
Scoop out pumpkin into mixing bowl
Add sugar and eggs and cream beat well
Add spices and salt
Pour into pie crust
Bake at 400 for 15 minutes
Then drop temperature to 375 for 30 minutes or till set
Cool and or serve warm with ice cream or whip cream

This recipe is for someone who has a sugar pie pumpkin....
The pie comes out a little like squash pie,but sweeter
I always feel like its a bit higher in vitamins although it does have a bit of sugar!
