• Balsamic Reduction
• 3 large tomatoes, cut into 1/2-inch slices
• 1 (16 ounce) package fresh mozzarella cheese, cut into 1/4-inch slices
• 1/4 teaspoon salt
• 1/4 teaspoon ground black pepper
• 1/2 cup fresh basil leaves
• 1/4 cup extra-virgin olive oil

Directions:

1. You can buy balsamic reduction or make your own by boiling down whatever balsamic vinegar you have on hand. If you decide to make sure own, bring about a cup to boil, then simmer until it thickens up to a light syrup stage. Set aside to cool.
2. Arrange alternate slices of tomato and mozzarella cheese decoratively on a serving platter.
Right before you are ready to serve:
3. Sprinkle with salt and black pepper, spread fresh basil leaves over the salad, drizzle with olive oil and the balsamic reduction.
