1 tsp. olive oil
2 shallots, chopped
4 carrots, chopped
3 ribs, chopped
2 cloves garlic, minced
1 bay leaf
1/2 tsp. dried thyme
1/2 tsp. dried oregano
3 32 oz. boxes of low sodium chicken broth
1 lb. of cooked chicken (I used a small rotisserie chicken and it yielded 1 lb. exactly)
8 oz. of orzo pasta
1/2 c. of fresh lemon juice (about 2-3 lemons)
black pepper to taste
5 oz. package of baby spinach

In a large stock pot heat oil over medium heat. Add shallots, carrots, and celery. Cook until vegetables begin to soften. Add in garlic and cook for another minute. Add in bay leaf, thyme, oregano, and pepper. Cook for another 30 seconds or so and then add in broth. Bring to a boil, turn down heat and simmer until vegetables are soft, about 5 to 6 minutes. Add in pasta, lemon juice, and zest. Stir and simmer for about 7 to 8 minutes. Add in cooked chicken and allow to heat through. Stir in baby spinach. Remove bay leaf an serve.
