Ingredients:
Ingredients:
10 cups old fashioned rolled oats
3 cups flaked coconut (either sweetened or unsweetened)
1 cup mixed nuts (I usually add more)
2 1/2 tablespoons ground cinnamon
3/4 teaspoon ground nutmeg (I grate it fresh)
1 teaspoon salt
1 1/4 cups sweet butter, melted
1 1/4 cups honey
2 1/2 cups mixed dried fruit (we like cranberries, cherries, apricots, golden raisins, figs -- use your favorites)

Directions:
Directions:
1) Preheat oven to 350 degrees. Combine first 6 ingredients in a large mixing bowl.
2) Melt the butter in a saucepan or microwave. Add the honey and remove from heat. Drizzle over the dry ingredients and toss with hands.
3) Press onto a baking sheet and bake for 15 minutes. Turn the mixture over with a spatula and bake another 10 - 15 minutes until golden brown.
4) Remove the sheet from oven and allow to cool for 5 - 10 minutes. Break into bite-sized pieces and toss in fruit. When completely cooled, store in airtight containers.
5) Enjoy!
