½ lb. bacon, chopped
1 c. chopped onions
1 c. chopped green bell peppers
1 c. chopped red bell peppers
1 T. chopped garlic
1 lb. black-eyed peas, soaked, drained, and rinsed.
14.5 oz. can diced tomatoes, undrained
4 oz. can diced jalapeños, undrained
1 T. Creole seasoning

Directions:

Cook bacon in large pot until crisp; remove with slotted spoon and drain on paper towels. Add onions, peppers and garlic to bacon drippings and sauté until onions are softened, about 3-5 minutes. Add in peas, tomatoes, jalapeños and Creole seasoning, stir. Add water just until peas are covered. Cover and simmer 45-60 minutes or until peas are tender. Add more water, if necessary. Serve with bacon as garnish.
