4 medium sweet potatoes
1 can black beans, drained and rinsed
1 tomato, diced
1 medium onion, diced
2 cloves garlic diced
2 tbsp olive oil
sour cream
cumin or chili pepper or any preferred spice

Directions:
Directions:
Wash and bake sweet potatoes about 45 minutes.

While they cook, saute beans, tomatoes, onion and garlic together in olive oil.

Cut each cooked potato in half and scoop out about half of the potato - save for something else.

Fill potatoes with bean mixture, top with a dollop of sour cream and seasoning.
