Ingredients:
Ingredients:
1 lb. ground beef
1-2 green bell peppers (chopped)
1 c. onion (diced small)
1 can diced tomatoes (29 oz.)
1 can tomato sauce (15 oz.)
1 can chicken broth (14 oz.)
1/4 tsp. dried thyme
1/4 tsp. dried sage
salt and pepper to taste
1 c. uncooked white rice

Directions:
Directions:
In a large pot brown ground beef with chopped peppers and onion, until onion is translucent, then drain grease.
Add tomatoes, tomato sauce, broth, thyme, and sage and season with salt and pepper. Cover and let simmer for 30-45 minutes, or until peppers are tender. In another saucepan make white rice according to package instructions and either add it to the soup or serve on the side.

Personal Notes:
Personal Notes:
Serve the rice separately so that it keeps its firmness - it tends to disappear in the soup if sitting in there too long.
