1-2 pounds of strawberries
1 - 8 oz.package cream cheese
1/4 c. confectioner's sugar
1 tsp. vanilla extract
1 c. graham cracker crumbs
lemon juice (optional)

Directions:
Use paring knife or melon baller to remove center of whole strawberries, then cut straight across the bottom of berries (so that they stand up by themselves).
Blend cream cheese, confectioner's sugar, and vanilla and scoop mixture into strawberries. Roll stuffed strawberries in graham cracker crumbs and serve.
Another option for piping the cream cheese is to add about 1.5 T of sour cream to the mix. Then use a fluted pastry tip and pipe the cream cheese. Since this method is very decorative, simply sprinkle the graham crackers on top.
