4 pork loin rib chops, 3/4 inch thick
pepper
1 tbsp. olive oil
1 (15 oz.) can of beans, drained
1 jar of salsa
1 tbsp. cilantro

Directions:
Directions:
1. Cut fat from from meat, and season with pepper on both sides.
2. Add olive oil to skillet, and cook pork chops over medium-high heat until they are brown. (about 4 minutes on each side) Remove
3. In same skillet add beans, cilantro, and salsa. Bring to a boil. Reduce heat.
4. Add pork chops back into skillet, and simmer (covered) for 5 to 6 minutes.

*Barbequing the pork chop to 145 º is really yummy!
*I use black bean and corn salsa to add extra flavor.
