2 whole raw chicken OR bulk bag of chicken leg quarters
1 lg bag frozen broccoli chopped
2 lg cans of cream of chicken soup
1-1/12 cups mayo (Do not recommend Miracle Whip for this recipe)
1 bag shredded cheddar cheese
1 lg can mushrooms (optional)
1 can milk (to start)

Boil your chicken in a large pan with Sea salt and pepper. Drain the cooked chicken and let cool but keep covered while cooling to avoid drying out. Once cooled de-bone and pull into bite size pieces and chunks.

In a separate large bowl mix cream of chicken soup with 1 - 1 1/2 cup of mayo and 1 can of milk (depends on how creamy you like it; less milk=more creamy, if it is too thick add more milk). Mix this together well, it will not be smooth but will be creamy. Add your chicken and broccoli and optional mushrooms, mix until well mixed and covered. Transfer into a casserole dish and cook on 400 for 45 minutes. Spread the cheddar cheese on top of the casserole and leave in the oven for 5 minutes more. Remove and let stand for 10 minutes then serve.
