Grandma's Pierogies Recipe

Dough
2 eggs
8 oz. sour cream
1/2 tsp. salt
3 cups flour

Potato/cheese Filling
3 or 4 potatoes
1/2 lb. sharp cheese
salt
margarine or butter
No Milk

Cheese Filling
1 lb. farmers cheese
1 egg
grated onion to taste
salt and pepper to taste

Dough
Beat together eggs, sour cream and salt. Add 3 cups of flour all at once and mix. Continue to add small amounts of flour and work dough until dough doesn't stick to your hands.
Let dough rest for 15 min covered.

Filling
Peel and boil potatoes till soft. Drain. Mash with cheese, margarine or butter and salt.

Cheese Filling
Combine all ingredients.

Roll dough out on floured surface. Cut circles with round cookie cutter or drinking glass rim. Fill each circle with filling of choice (about 1 Tbsp.). Fold and pinch closed. Can go around edges with fork pressing to seal. When all filled. Drop pierogies into gently boiling water. Cook until floats to surface (about 8 minutes). Remove with slotted spoon. Rinse with cool water and let dry. Saute onion in margarine and add pierogies.

Don't overfill. Be careful to really seal or they will open in the boiling water
