1 lb. chicken livers
3 tbsp. butter
Kosher salt
3 tbsp. vegetable oil
2 medium onions, chopped
2 large hard boiled eggs, coarsely grated
salt and freshly ground pepper, to taste
Lettuce leaves and tomato slices for serving(optional)

Directions:
Saute chicken livers with a light sprinkle of kosher salt in the butter in a covered sauce pan at medium heat until cooked through and tender, about 10 minutes. Allow to cool, slightly.
In a large saucepan, add oil and saute onions over a low-medium heat, stirring often, about 15 minutes or until tender a well browned.
Chop the liver in a food processor. Add onions and chop with pulses until well blended. Transfer to a bowl and lightly mix in eggs. Season with salt and pepper. Refrigerate, covered. until ready to serve, up to 2 days. Serve cold, in scoops on lettuce leaves and garnish with tomato slices, if desired. Great with your favorite crackers
