Ingredients:  
1 c. quinoa cooked in 2 c. water or broth (sauté small shallot first then toast quinoa)
1-2 cukes diced
Sun dried tomatoes
1 c. chopped parsley
1/2 c. chopped mint
6-8 T. garlic olive oil
3 T lemon juice and zest
1 t. Greek seasoning or salt and pepper

Directions:
Directions:
Mix dressing.
Then add and mix other ingredients.
Chill.
Leave out of refrig for a bit before serving.
