1 1/3 cups yellow corn meal
¼ cup shredded, uncooked potatoes, peeled
1 teaspoon baking powder
2 cups milk
1 tablespoon lemon juice
2 eggs, lightly beaten
2 tablespoons chopped, fresh scallions
Nonstick cooking spray

Directions:
Directions:
In a large bowl, combine the cornmeal, potatoes and baking powder. Add the milk and lemon juice. Stir in the eggs and scallions. Spoon in 2 tablespoons of batter into a hot, nonstick skillet lightly coated with nonstick cooking spray. Cook on each side for two minutes or until brown. This is great as an appetizer or served with apple butter. Delicious!
