Ingredients: 1 lb. bulk sausage 1 1/2 cup chopped celery 1 1/2 cups flour 4 tsp. baking powder 2 Tbsp. sugar 2 tsp. sage 1 tsp. thyme 1 1/2 cups cornmeal 1 pkg. onion soup mix (Use only 1/2 for cornbread save other for gravy) 1/4 cup chopped pimento 3 eggs beaten 1 1/2 cup milk 1/3 cup salad oil

Directions:Preheat oven to 425 degrees. Brown sausage in large heavy skillet. Set aside. Saute celery in drippings in the skillet. Drain and set aside. Mix all other ingredients in a large bowl. Stir well. Mix in sausage and celery. Pour all into the same skillet used for sausage and celery. Bake at 425 degrees for 25 - 30 minutes. Prepare remaining onion gravy mix to serve over cornbread. |

Notes: Daddy made this a lot. Here is the place for the famous LORAN HOG STORY. One summer day, the hog got out of the pen. We figure the hog must have gotten out of the pen several times before. Grandma told Ralph and Fidelis who were young adults at this time, to put the hog back and fix the pen. The family had been eating fresh vegetables and melons and eggs and were hungry for something more substantial, because Fidelis looked at Ralph and said "How about some pork chops for supper?" They killed the hog and all the family was happy for the fresh meat. Grandma had to can and cook the meat right away as it was so hot. Hogs are normally slaughtered in cool weather. Maybe they were tired of fixing the pen all the time.
